Today, I borrowed a recipe from Womanista for Chicken Fajita Chili! I’ve been searching for healthy crockpot recipes, 400 calories or less. Easy stuff I can cook while I go to work and the gym, that would also be easy to heat up for meals at work.
This Chicken Fajita Chili is exactly what ya girl ordered. It is packed full of nutrition and flavors, and it’s spicy! But, if you don’t like spicy, no worries! Leave out the crushed red pepper, or use fewer bell peppers. It’s all up to you.
I followed this pretty closely. I just used a little more red peppers to add extra spice, and I added some cheese, because, well, CHEESE.
I’d rate this 4.5 stars, easily.
I am looking forward to eating this for lunch all week. It’ll be super easy to throw in a Mason Jar and heat up at meal time.
